Zucchini Gratin (Low Carb)

Zucchini Gratin is a creamy and cheesy comfort food that hits the spot.  But what if you could enjoy all that deliciousness without the guilt of carbs? That’s where Mario Batali’s Low-Carb Zucchini Gratin comes in. Zucchini is a low carb vegetable and best of all it’s very versatile.

You can cook zucchini gratin (low carb) using only 6 ingredients and 8 easy steps.

Ingredients to Prepare Zucchini Gratin:

  • Medium zucchini (18 oz.)
  • Ruth Ann’s seasoning
  • Dried shallots
  • Italian shredded cheese ( Preferably Gruyere )
  • Roasted garlic powder
  • Heavy cream

Instructions To Prepare Zucchini Gratin:

  1. Preheat and Prepare: Start by preheating your oven to 375°F. While it’s heating up, spray a white casserole dish with any non-stick cooking spray. This will ensure that your gratin creation won’t stick to the dish.
  2. Slice the Zucchini: Using a mandolin or a sharp knife, slice the zucchini into thin rounds, about 1/4-inch thick. Thin slices are a  key component to achieving the perfect texture in your gratin.
  3. Season Liberally: Season the zucchini slices liberally with “Ruth Ann’s” seasoning. This adds a delightful depth of flavor to your dish.
  4. Layering: Start by layering the casserole dish. Put 1/3 of the zucchini slices in the dish, creating the first layer. Sprinkle 1 tsp of dried shallots and a 1/2 cup of Italian shredded cheese on top of the zucchini.
  5. Repeat: Keep layering. Add another 1/3 of the zucchini slices, shallots, and cheese. Repeat this process once more, creating a total of three layers all together.
  6. Creamy Goodness: In a separate bowl, combine heavy cream and roasted garlic powder. This mixture will give your gratin creamy and garlicky flavor. Pour it over the top layer evenly.
  7. Baking Time: Put your casserole dish in the preheated oven and bake for about 40 minutes. Meanwhile, the zucchini will become tender. The cheese will then turn to a golden brown and bubbly, and will be aromatic.
  8. Serve and Enjoy: Once you take it out of the oven, let your Low-Carb Zucchini Gratin cool down for a few minutes. Then, serve it up and enjoy the flavors. The spices, such as the nutmeg, garlic, thyme, kosher salt, and pepper in this recipe add a delightful complexity to the dish. Don’t forget the Gruyere cheese, which elevates the gratin to a whole new level of cheesy perfection.

Mario Batali’s Low-Carb Zucchini Gratin is proof that you can enjoy the indulgence of a gratin without compromising your healthy lifestyle. The layers of zucchini, cheese, and that creamy garlic and heavy cream make every bite indulgent.
